This vinegar was made by blending the kombuchas we brewed during the year 2019 and then further fermenting and aging them together in new American oak barrels crafted by artisan coopers in the Adirondacks.
This unique and ephemeral combination is a living record of us and our brewery during this year.
Enjoy this as you would a fine cask-aged spirit by serving it neat or on the rocks, in an inspired cocktail and as part of a special meal with loved ones.
*Raw, unfiltered + pasteurized. May contain some naturally occurring sediment. Refrigeration is not necessary but will reduce the development of floating vinegar mother.
